Don’t be afraid to encourage children to eat new and different foods.

 

This simple salad contains artichoke hearts (readily available canned or in jars in most supermarkets) and crunchy green, red and orange peppers.

 

Tuna is a good source of omega 3, making it a great addition to a child’s meal.


400g canned tuna
Sliced or diced red, green and orange peppers
1 can of kidney beans, chickpeas or mixed beans
4 tbsp tomato puree
2 tbsp lemon juice
250g halved artichoke hearts
Chopped cucumber
Cherry tomatoes
Fresh herbs – try parsley or basil


Mix the tomato puree and lemon juice together, then throw in all the other ingredients and stir.

 

Chill for a few minutes and serve.
