Tell the kids it’s a surprise because it’s different every time they eat it! That’s because this super-easy recipe makes use of whatever yummy vegetables you have in the cupboard, along with nutritious, delicious chickpeas.

 

1 can of chickpeas

1 can of chopped tomatoes

3 or 4 cups of any cubed vegetables. Try sweet potato, aubergine, carrot, courgette or pumpkin.

½ cup of frozen peas or sweetcorn kernels

Fresh herbs – try basil, sage
or parsley
Water to cover

 

This one couldn’t be easier.

Just throw everything together and cook over a medium heat on the hob until the veggies are tender.

 

Serve by itself or with rice.
